Tapioca Beiju recipe with plantain
Looking for ideas for a practical and nutritious healthy breakfast or afternoon snack? Here I share with you how to make tapioca beiju with banana, a delicacy also simply called tapioca.
The beiju has indigenous origin and is made with tapioca (granulated starch extracted from cassava). When you spread the tapioca in the hot skillet, it coagulates and turns into a type of dry pancake or crepe that can be filled with sweet or savory ingredients. In this case, I filled my tapioca beiju with banana, honey and cinnamon to get a tasty and low-calorie option. Another advantage of the tapioca kiss is that it is naturally gluten free, so it is valid for those who cannot consume wheat.

Ingredients for making tapioca Beiju with plantain:
250 grams of homemade powder
2 plantains or dwarf bananas
honey to taste
1 teaspoon of margarine
cinnamon powder to taste
How to make tapioca Beiju with plantain:
Cut the bananas into pieces and place on a plate. Add honey and cinnamon, mix and set aside.
Prepare your tapioca beiju lightly wetting the flour and add a pinch of salt. If in doubt, check out how to make tapioca with homemade sweet powder.
Heat a skillet and, when it is heated, sift the tapioca beiju until it covers the bottom of the skillet.
When the tapioca loosens from the bottom, turn the dough and stir until it comes loose on the other side as well.
Tip: Turn the dough gently and with the help of a spatula, so as not to break.
Spread a little margarine and the mixture of banana, honey and cinnamon, which is the filling of this sweet tapioca beiju, over the dough.
Tip: Putting margarine in tapioca beiju helps it not become dry.
Using a spatula, roll the tapioca dough until it forms the beiju, taking care not to let the filling escape.
Place the banana tapioca on a plate, drizzle a little honey and sprinkle with cinnamon to finish. This is my suggestion for a delicious breakfast or for that afternoon snack. Ah! Don't forget about the tasty coffee! Bon appetit and let us know in the comments what you think.
